Whole Wheat Bread

6 cups warm water
1/3 cup oil
2/3 cup honey
2 tbsp dough enhancer (optional)
3 tbsp wheat gluten
3 tbsp yeast
2 tbsp salt
15 - 17  cup flour

USING A BOSCH MIXER: Mix all ingredients with half of the flour. Mix well. Then add the remaining flour, 1 cup at a time until it pulls away form side of bowl. Knead for 6 Minutes. Shape into loaves. Put in bread pans. Let raise. Cook @ 350 for 30 - 35 minutes. Makes 5 loaves.

Sweet & Sour Meatballs

Meatballs:

2 lbs meat
2-3 eggs
1 cup bread crumbs
1/2 cup fine chopped onion (cook a little first)
1 tsp Ginger
2 tsp season salt
1 tsp pepper
1-2 tbsp Worcestershire Sauce
1 tbsp sugar

Cook meatballs @ 400 for 10 - 15 minutes

20 oz can crushed pineapple 
( DRAIN & SAVE JUICE. then add water to it to make 1 cup pineapple juice)
1/3 cup+ of water
2 tbsp soy sauce
1/2 cup brown sugar
3 tbsp cornstarch
1/2 tsp ginger
1/2 tsp season salt
1 lg. carrot diced
1 lg bell pepper diced

Over medium heat, combine pineapple juice, water, vinegar, soy sauce, sugar, cornstarch, ginger & season salt. Cook until thick. Add veggies, pineapple and meatballs. cook 20 minutes. Serve over Rice.

Taco Casserole

Meat Mixture
Mix together:
1 lb Ground Beef (seasoned and browned)
15 oz can Red Kidney beans (drain & rinse)
15 oz can chili beans
1/2 pkg Chili Seasoning
1 tbsp Brown Sugar

Line bottom of casserole dish with crushed corn chips. Top with meat mixture. Top with grated cheddar cheese. Bake @ 350 for 30 minutes. May top with sour cream and tomatoes.

*My Family loves to eat this with canned corn & applesauce.

Our version of Chicken Pot Pie

cook and dice or shred 1 lb chicken
cook 1 small pkg of frozen peas and carrots
saute 1/2 cup each of chopped celery & onion.

prehaet oven to 450 

Combine all of the above with 1 can of Cambell's chicken gravy. keep this mixture hot while you prepare the dough for biscuits. When dough is ready - pour hot chicken mixture into a 9x13 casserole dish. Drop dough by tbsp on top of mixture. Dollops will be close together, touching slightly. Bake for 10 minutes or until biscuits are golden brown on top.


Biscuits Recipe

2 cups Whole wheat flour
1 tbsp baking powder
1/2 tsp cream of tarter
1/4 tsp salt
1/2 tsp thyme
1/2 cup butter softened
1 cup milk

stir together dry ingredients. Cut in butter. Make a well and add milk all at once. Stir just until dough clings together.

Viva La Chicken

1 frying chicken (boiled and broken into pieces)
1 pkg corn tortillas
1 can green Chile salsa (about 1 c. any salsa will work also)
1 can cream of mushroom
1 can cream of chicken
1 c. Milk
1 grated onion
1 lb grated cheese (any kind... I like Mexican blend)


combine salsa, soups, milk & grated onion

Layer in casserole dish starting with tortillas, 
then salsa mix, then cheese. ( i usually do 3 layers)

Bake @350 for 1 hour.

*Best when set overnight.

Marinade for Luau Chicken

2 c. Soy Sauce
2 cups water
1 bunch chopped green onions
3 tbsp Garlic
1 1/2 tbsp Ginger
1/2 cup Pineapple Juice

Mix all ingredients and add to chicken the day before.

Taco Soup

1 lb. ground beef
1 pkg taco mix
2 (15 oz) tomatoes (i blend because my kids don't like the chunks)
1 can beans (i use black or kidney)
chips
cheese sour cream (optional)

Brown Ground Beef and drain. Add taco mix with recommended water. Add tomatoes and beans and corn. Bring to a boil, cover and simmer for 20 mins. Serve with Chips Cheese & Sour cream. I double this recipe.

Creamed Eggs Over Biscuits

Mix together:

2 c. flour
1 tbsp baking powder
1/2 tsp salt
2 tsp sugar

Cut in
 
1/2 c Margerine
2/3 c Milk

Roll out and cut with cookie cutter. 
Bake on ungreased baking sheet @450 for 10-12 minutes

Creamed Eggs

1/4 cup margarine or butter
1/4 cup+ Flour
2-4 cups milk

Melt Margarine in saucepan. Add Flour. Add Milk 1 cup at a time until desired thickness. Season with salt & pepper. Then add diced boiled eggs and 2 tbsp Parmesan cheese. May add diced chicken and or frozen veggies if desired.

Sausage Dip

1 lb Jimmy Dean Sausage
2 packs Philly Cream Cheese
1 can stewed tomatoes (Italian) drain & chop
4-5 chili peppers
1 whole onion
3/4 whole red pepper
2-3 mushrooms

Brown meat and drain.
chop all veggies & put everything in crock pot.
Cook on low for about 8 hrs


Note: put 1/2 of veggies w/ meat and brown -- not peppers
can cook on high to speed things up -- just need to stir more.
Chop everything up but do not use mincer -- it will lose to much fluids.

Scotch Shortbread

1 lb cold butter
2 c sugar
4 c flour


Place ingredients in bowl. 
Cut butter into smaller pieces, then knead with hands until dough is combined,
Form ball and split into 4,
take 1/4 and cut into 12 pieces.
roll each into a ball and flatten on cookie sheet until 2 1/2" in diameter
Poke 2 times with fork
Bake at 350 for 10 mins or until bottoms are tan and tops are still white.

tip: make a test cookie -- if it spreads -- add more flour to dough.

Wassail

Simmer for 30 mins

2 quarts apple cider or juice
1/2 can orange juice concentrate
3 Cinnamon sticks
5 cloves

Apple Crisp

For  topping Mix:

1 c oats
1 c flour
1/4 tsp baking soda
1/2 tsp baking powder
pinch of salt
1 c sugar

add; 1/4 cup melted margarine 

Peel & slice apples (about 6 cups)
and put in 9x13 baking dish.
Sprinkle sugar and cinnamon on top to taste.
Sprinkle topping over apples.
Bake @ 350 for 40 minutes 
or until apples are tender.

English Toffee

2 cubes butter
1 cup sugar


Boil until turn color of brown paper bag -- stirring occasionally. (this doesn't take very long) Pour onto a cookie sheet. sprinkle with chocolate chips. Let them sit and melt a minute or so. Sprinkle with chopped nuts. Put in freezer for about 10 minutes. break into pieces. ENJOY!

Salmon Spread

1 8oz pkg cream cheese softened
1 can salmon (skin and bones removed)
1 T lemonjuice
1 tsp dried parsley
1/2 tsp dried chopped onion
dash salt

Mix all ingredients together and chill
Serve with crackers bread or toast.

Bacon Wraps

1 lb Bacon (there are usually 15 strips)
1 can water chestnuts
1/2 c Ketchup
1/2 c brown sugar


cut the bacon strips in half (now you have 30 strips) 
Cut the larger water chestnuts in half  
(you want to end up with the same # of water chestnuts as bacon strips)
Wrap a piece of bacon around a water chestnut and secure with a toothpick.
Place in casserole dish and bake @ 350 for 30 minutes
Drain grease off
Mix ketchup and brown sugar together.
Dip each bacon wrap in mixture and return to casserole dish
(or just carefully pour it over the wraps with out getting it on the toothpicks)
Return to oven for 15 more minutes.

Tasty Toast

1 loaf French Bread or Baguette Bread or Melba rounds
1 c shredded cheddar cheese
1/2 c mayo
1/2 c sour cream
1 pkg (0.7 oz) dry Italian dressing mix
1/2 cup chopped red bell pepper
1/2 cup chopped green bell pepper

Combine cheese, Mayo, sour cream, & dressing mix.
Slice the bread into 1/4 inch thick slices
Spread cheese mixture on bread slices
sprinkle with chopped peppers

Bake @ 375 for 5-10 minutes or until bubbly and cheese is melted.

Apple Cranberry Cookie Cobbler

4 Granny Smith Apples (peeled & sliced)
16 oz can whole berry cranberry sauce
1/3 cup packed brown sugar
3 tbsp flour
1 tsp cinnamon
15 oz Sugar Cookie Dough
(can used premade or homemade)

Put apples in 9x13 baking dish
Mix cranberry sauce, brown sugar, flour & cinnamon
Pour over apples
Roll out cookie dough 1/4 inch thick.
cut into 2" squares; arrange loosely and evenly on top.

Bake @ 400 for 30 - 35 minutes

Butterscotch Apple dip

1 can sweetened condensed milk
1 c butterscotch chips
1/4 tsp salt
2 tsp white vinegar
1/2 tsp cinnamon


in a saucepan over low heat, combine sweetened condensed milk, butterscotch chips and salt. cook & stir until melted.
Remove from heat
stir in vinegar and cinnamon.

Serve Warm

Christmas Truffles

1 1/2 lbs Hershey Chocolate Bars
(can be plain, almond or Symphony is great!)
12 oz cool whip
(original works best)
vanilla wafers, toasted coconut, or oat bran 
(you just need something to roll them in)

Cut chocolate into small pieces. it will melt better that way.
Place in a glass bowl and melt for 30 second intervals in the microwave until completely melted.
Slowly fold in cool whip.
drop by teaspoon into mixture you have chosen to cover and coat completely
Set on wax paper and place where they can keep cool.
Store in a cool place.

Pumpkin Chocolate Chip Cookies

1 1/2 cups sugar
1 c. pumpkin
2 eggs beaten
1/2 c oil
1/3 c water
4 c flour
1/4 tsp salt
1 tsp Baking soda
1/2 tsp cinnamon
1/2 tsp nutmeg
chocolate chips
can also add raisins or nuts

Combine sugar, pumpkin, eggs, oil and water; mix well
Sift together flour, salt, baking soda, cinnamon and nutmeg
Beat into pumpkin mixture; blending any lumps
add a little more flour until the dough is a thick enough consistency
Stir in Chocolate chips
Spoon large tbsps onto greased cookie sheet.
Bake at 350 for 15 mins

Best Served Warm!
(but what cookie isn't!?)

Chex Muddy Buddies

9 c Chex Cereal
1 c semi sweet  chocolate chips
1 c peanut butter
1/4 c butter
1/4 tsp vanilla
1 1/2 c powdered sugar

pour cereal into a large bowl & set aside. 
Combine Chocolate chips, peanut butter, and butter in 1 quart microwave bowl
Microwave for 1 1/2 mins or until smooth (stir after 1 minute)
Stir in Vanilla.
Pour chocolate over cereal and stir until all pieces are evenly coated.
Pour cereal into large container (with seal) with powdered sugar. 
Seal securely & shake until all pieces are well coated
spread onto wax paper to cool
store in an airtight container.

Frosted Pumpkin Bars

4 eggs beaten
1 c. oil
2 c. sugar
1 c. pumpkin
1/2 tsp salt
2 tsp cinnamon
1 tsp baking soda
1 tsp baking powder
2 c. flour

Cream eggs, oil, sugar. 
Add pumpkin and rest of ingredients.
Bake @ 350 for 20-25 mins.
Frost with cream cheese when cool.

Frosting

3 oz cream cheese
6 tbsp butter
3/4 lb powdered sugar
1 tsp vanilla
1 tsp milk
